Pizza Schmizza founder, Andre, spends a little time in Mexico now and again. When he’s not harassing the locals or climbing Mayan ruins, he’s searching out local fare with one piece of his mind on Portland pizzas. His most recent trip inspired a new creation – Pollo de Cabo!
Pollo de Cabo features savory garlic-lime chicken, roasted corn & poblano peppers atop a light olive oil and garlic base sauce. Then it’s topped with green onions, chopped avocado, feta cheese, fresh cilantro and a swirl of chipotle-lime sauce.
